Course Description

Explores personal food habits and beliefs. Emphasizes practical application of nutrition knowledge to enhance general health. Analyze present diet and evaluate it according to latest nutritional guidelines. Basic nutrition course for students with little or no science background. Audit available.

Intended Outcomes for the course

  • Use knowledge of nutrient functions, characteristics and food sources to (1) improve food choices and (2) reduce incidence of health problems associated with current American diet
  • Avoid nutritional quackery in the marketplace by using credible sources of nutrition information.
  • Develop and follow a better food budget by purchasing fewer processed foods and improving choices.

Outcome Assessment Strategies

Examination, computerized dietary analysis, group activities, participation. Class meets two hours, one day per week.

Objectives listed above designed to educate students about food/nutrition from the point they make grocery lists, to the store/home/counter/refrigerator/stove/microwave/plate/body/trash/sewer. Students to recognize and learn to effectively manage personal issues in purchase, preparation, sanitation, consumption, and disposal of foods.
