Details about this class
This is a fully online course. There are no required weekly Zoom sessions. However, I have weekly (optional) virtual office hours, and am always available to schedule individual Zoom or phone meetings with students.
The weekly course content is available Mondays at 12:01am and work is due every Sunday at midnight.
Prerequisites: IRW 115 (or WR 115 and RD 115), and (MTH 65 or MTH 98) or equivalent placement, and BI 112 or cellular biology equivalent

Here is a little information about myself! My name is Cindy Francois, MS, RD/RDN, LD. What does all of this mean? :) I have a Master's degree in Nutrition from Oregon State, a BS degree in Food Science and Nutrition from Central Washington University, and did my Dietetic Internship at OHSU. I am licensed to practice in the state of Oregon.
I grew up eating a very "typical American diet" and struggled with weight in my youth. However, when I took my first elective nutrition course in college, the content inspired me to learn as much as I could about nutrition and become a much healthier version of myself. I changed my major immediately and haven't looked back.
While I have a passion for healthy eating and fitness, I also enjoy many foods in moderation! Like most of us, I wear many hats in life! I am a wife, mother to grown sons, a dog mama, a candle-maker (my hobby/side hustle is making scented candles which I sell in local wineries and gift shops), a cook, and a friend to many. In my free time I can be found with my nose in a book or making a mess in the kitchen.
One of the best parts about online courses is interacting with students from around the state, country, and even the world - from all walks of life! Whoever you are, wherever you live, for whatever reason you are taking this course ... I welcome you! Cindy Francois

Technology
There is NO TEXT to rent, borrow or purchase for this course! You are enrolled in an Open Educational Resource (OER) course. All the reading is incorporated into each weekly module, either directly in the content or through links to articles and videos. I encourage the use of Google Suite for document submission, though it is not required and Microsoft products such as Word, Excel, and Powerpoint work well. iOs products are not compatible with D2L at this time.
Students are required to purchase the eshaTRAK dietary analysis access code for $15 through the PCC Online Bookstore (if using financial aid OR directly from esha.com. (Note: purchasing from esha.com directly gives you an option to rent access for 4 months at cost of $15. You will need the access for at least one month (during Units 4 and 5). This does not need to be purchased until after the first month of instruction and you will receive instructions on how to purchase this a few weeks into the course.
No show policy
Your instructor can mark you as a "no show" if you do not participate in your class during the first week. This will remove you from the class. It is important to log in as soon as the class starts to see what the participation requirements are.

Before you take your first online class at PCC, you must complete the start guide for online learning. The start guide will help you decide if online classes are right for you. Once you complete the start guide, you will be eligible to register for online classes.
The Start Guide is not required for remote classes but strongly recommended.
