Mid-East cooking class offers authentic cuisine

Photos and story by

PORTLAND, Ore. – We hear these countries mentioned daily on the news. What we don’t hear about is the flavorful, time-honored cuisine that represents daily life in the Middle East. A new Portland Community College non-credit class delves into these exotic dishes, while taking a look at the Middle East’s rich culture. Instructor and chef Sasha Kaplan will lead Mid-East Peace Table, offering students the chance to experience savory dishes from Lebanon, Syria, Iran, Iraq, Israel, Afghanistan and Greece. The hands-on class features authentic techniques and allows students to compare traditional recipes. "Experiencing an aspect of daily life in the Middle East like cooking is a unique way to build cultural awareness and understanding,"said Kaplan. "At the same time, these delicious recipes are something you will want to share with your own family." The class is offered from 1 to 4 p.m. for two Saturdays, Jan. 24 and Jan. 31, at Sheridan Fruit Company, 408 S.E. Third Ave. Cost is $49.
