Summer cooking class captures Mediterranean flavors

BEAVERTON, Ore. – If summer makes you long for the sunny beaches of the Mediterranean, take heart. With a few simple ingredients, you can visit the Italian Riveria without leaving your kitchen. Portland Community College will present a non-credit cooking class featuring simple Mediterranean meals. In Turn Simple Into Special, students will learn to create olive tapenade, pan sauteed garlic prawns (gambas pil pil), and bulgur wheat salad with tomatoes and fresh mint. Instructor Rana Potter shows how to use the ingredients you probably already have in your cupboards at home. The one-day class will take place from 1 to 4:30 p.m. Saturday, July 24, in Room 1411E of PCC’s Washington County Workforce Training Center, 18624 N.W. Walker Road.
